CARE of Lavender (Lavandula):
They have beautiful grey-leaved leaves and prefer a sunny position that is not too wet in winter. Prune deeply in March/April but still leave green and after flowering cut the flowers and stems with a little greenery, this to keep the plant beautiful (grey) green for longer.
Lavandula is also used in cooking but should be used in moderation. Together with dill, savory and sage, this is very tasty for a herb butter. The young leaf tips can cook in soup, salads, fish, poultry and are removed before serving. The taste of lavender is sweet and very strong.
